Cupcakes are the happiest pastry.

I went to visit my favorite lil' kristi in Chicago a few days ago. We visited Chinatown for a taste of home, went iceskating at Millenium Park, caught a movie, chatted about life and theology, relived my days as a college student by staying in her dorm room (oh, the good old days), met her friends and experienced a bit of her life at Moody, and last but certaintly not least....drumroll...visited Molly's Cupcakes!!!!




I've felt strongly for quite awhile that cupcakes are the happiest baked good/pastry out there. I challenge you to find one happier, but I'm sorry, it's just not gonna happen. I feel like if a cupcake could talk to you it would say (in a little sweaky kid voice, maybe with a little sweak cough thrown in), "Hi. I love you. I want everyone in the world to be happy. Sit back, relax, and enjoy. I'm like a little piece of edible sunshine, especially with a cup of coffee." Suprisingly (or maybe not so much, since great minds really do think alike) Kristin said she's thought the exact same thing about cupcakes for as long as she can remember, so I know now I don't share this opinion alone.

I want to open my own bakery one day (that and about a thousand other things). It would be the happiest place you could imagine: hippies playing board games over coffee, moms bringing their kids for an after school snack, brooding artists writing poetry, old people with their dogs. I'd know all the customes and name cupcakes after them. It would be heaven on earth.

I say all that to say: If you're ever in Chicago, I beg you, stop by Molly's Cupcakes on Clark Street. You won't be able to contain your happiness, I promise.
